Each piece of Kobe beef is accompanied by an authenticity certificate issued by the Kobe Beef Marketing & Distribution Promotion Association, including the animal’s individual 10-digit identification number and its BMS (Beef Marbling Standard) score. Our team verifies consistency between the certificate, the producer’s invoice, and carcass markings before loading onto the cargo aircraft.
At what temperature is Wagyu transported by air freight?
Wagyu beef is transported vacuum-sealed at a strictly controlled temperature of 0°C to +2°C, the optimal threshold for preserving marbling and preventing microbiological deterioration. Onboard HACCP data loggers record the temperature every 60 seconds. For aged cuts, the target temperature may be adjusted between +1°C and +3°C per the master butcher’s specifications.
